Freshly baked peanut butter cookies are the perfect bedtime treat🥛

I was fortunate enough to luck upon these beauties, by following a delightful recipe I came across in my Momma’s addition of Eagle Brand’s ‘Classic Recipes’.

Entitled: Easy Peanut Butter Cookies (page 48)

1 (14 –ounce) can Eagle Brand® Sweetened Condensed Milk (NOT evaporated milk)

¾ to 1 cup Peanut Butter

1 Egg

1 teaspoon Vanilla Extract

2 cups Biscuit Baking Mix

Sugar (optional)

  • In large mixing bowl, beat Eagle Brand, peanut butter, egg and vanilla until smooth. Add biscuit mix; mix well. Chill at least 1 hour.
  • Preheat oven to 350 degrees. Shape dough into 1-inch balls. Roll in sugar. Place 2 inches apart on ungreased baking sheets.
  • Flatten with fork in criss-corss pattern. Bake 6 to 8 minutes or until lightly browned (do not overbake). Cool. Store tightly covered at room temperature.

(Makes about 5 dozen cookies)

Prep Time: 10 minutes

Chill Time: 1 hour

Bake Time: 6 to 8 minutes
